I've read in a few stories, by Steve, that you can fire missiles at a waypoint, wait until 100-200 group up, and than send them at a planet/enemy.
Is this a game feature or writer's freedom? If it's a feature, I'd like to know how it can be done and if the feature is available in 5.02

It was removed from the game a few versions ago. It was just too powerful a tactic and felt gamey rather than realistic.

I have a question related to this, though more about control over missile FCs.
After firing a salvo at a particular target, can I re-target the corresponding FC to a different contact for the next salvo? Or would that cause the missiles already in-flight to switch their targets to the new one assigned to their FC?

You can, previous salvos will not be affected

Maybe FC feed some sort of passive guidenance coordinates to salvos

The current system is heavily-debated, much studied, and deliberate change to fix an exploit inadvertently created by an oversight on Steve's part - the waypoint super-swarm of missiles.

No, that switching fire control is working as intended, i.e. not an exploit.
